A gel-foam topper is memory foam with a cooling delay built in: it feels cool at first, then wraps and warms once the gel saturates. Buy latex for genuine all-night cooling and firmer support; buy gel foam for a soft, contouring feel at a lower price.

They cool by completely different mechanisms

Latex cools by structure.Natural and synthetic latex is a springy, open-celled foam full of interconnected air pockets, and most toppers are also pinhole- ventilated. It does not soften and collapse around you the way memory foam does — it pushes back — so you rest on top of it with air able to move. Gel foam cools by borrowing time.A gel-infused memory-foam topper is memory foam with gel beads or a gel layer added. The gel has real heat capacity, so it absorbs warmth for a while and the first contact feels cool. But it is a fixed quantity of capacity: once the gel has warmed to your temperature it stops helping, and underneath it is still memory foam — it still softens, wraps you, and insulates. The cool phase is real and it is temporary.

Which to buy

Buy latex if your foam mattress is both hot and too soft, if you want the cooling to genuinely last the night, or if you want a topper that will still be doing its job in five years. You are paying more up front and lifting something heavy onto the bed, in exchange for a fix that does not degrade.

Buy gel foam ifyou specifically want the soft, pressure-relieving, body-hugging feel of memory foam and you accept that the “cooling” is mostly a cooler start rather than a cooler night.
